Fried Potatoes



We are potato people. We like potatoes in all forms, hash browns, french fries, baked, mashed, roasted and fried. Today, we're featuring our fried potatoes. We're pretty sure we've perfected the cooking method.


Here's what you need:
1/2 bag red potatoes
1 shallot
1 clove garlic
3 Tbsp butter, divided
olive oil to coat
Kosher salt & black pepper


Here's what you do:
Start by slicing your shallot.




And, mince your garlic.




And finally, quarter your potatoes.




Add the garlic, shallot, and potatoes to a large bowl and season with salt and pepper.



Coat with olive oil and give it a toss.




Using your 12" skillet (or any skillet you have that has a lid), heat the pan over high heat. You want it really, really hot. Add half of the butter and let it melt. This will be quick, so be ready with your potatoes. When we heat a pan to this high of a heat, we generally lift the pan off the heat when we add the butter. It prevents some splattering. We return it to the heat right away.




Pour in the potatoes. Let them cook over high heat for a couple minutes, stirring to prevent burning.




Once your potatoes look like ours below, add the other half of the butter.




Now, drop the heat to low and cover. Let them cook for about 30 minutes on low heat, stirring occasionally.




Give it another good stir right before you put it on the plate.
