Simple Rice Pilaf



We paired this simple pilaf recipe with our Dijon Crusted Stuffed Chicken. It's pretty easy and can be thrown together on a weeknight to kick your meal up a notch. This serves 2-3 people, so adjust the recipe as needed for bigger groups.


Here's what you need:
1 cup white rice (you can use brown too)
1 1/4 cup chicken stock
1 Tbsp butter
2 carrots
2 scallions
Kosher Salt
Freshly ground black pepper


Here's what you do:
Wash, peel, and dice up your carrot. It's easiest to cut them into matchsticks and the dice from there.




Combine rice, chicken stock, carrot, and butter in a medium sauce pan. 




Bring to a boil.




Once boiling, cover and remove from heat. This should take 7-8 minutes to cook thoroughly.




While that's cooking, slice up your scallions.




After the rice has absorbed the water, fluff with a fork and stir in the scallions. Salt and pepper to taste.




You're finished. Told you it was easy!
